Q: our kitchen walls are padded and covered with fabric. we want to remove it but need another wall cover that will absorb sound - wallpaper, paing ?

And I imagine you could use regular paint and "decorate" the room with pieces that will kill sound. There's a conference room I used to visit a lot (I was a foster/adoptive parent) that was located in an remodeled brick bread factory. They used these things that looked like whacked out chandeliers, but they were in very odd shapes, colorful, and were made of cloth/foam.
Seat cushions make excellent sound absorption items. Too bad you couldn't have a couch in the kitchen...
