Q: Any thoughts on using unlicensed contractors?
As pros, do you know any good people who are unlicensed? Or, do you think unlicensed means unprofessional and risky?

All in all, DONT DO IT. You are putting your self at risk whenever you use and unlicensed constractor. Most do not carry proper insurance. Meaning, if they get hurt on the job, they can turn on you, creating a liability issue for you, your family and your home.
Are there unlicensed contractors who are capable of completing the work? Sure. Many are skilled. However, they have failed to follow the rules that the "professionals" abide by.
Professionals carry proper insurance, proper certification where necessary, offer complete contracts that protect both them, and "you" and most often service what they sell. Consequently, that is why you will typically pay a little more up front to a reputable professional contractor. A little extra money is a LOT of piece of mind when your protecting your single largest investment, "your home".
